Allison Lakin began her career designing and implementing multi-disciplinary museum education programs around the country. She fell in love with making cheese in 2002, and launched Lakin’s Gorges Cheese in 2011, making fresh and aged cheese using cows milk. For her, the combination of science and art is what attracted her to cheese – and eating the delicious results.
Farmer and chef Neal Foley, received culinary training at Ballymaloe Cookery School, and has been cooking and teaching for the past 15 years. He is the farm manager at East Forty Farm and runs Foley’s Custom Sawmill, custom milling lumber on a portable sawmill.
In October 2016, Lakin and Foley settled on this 1700s farm in Waldoboro, Maine, which they christened East Forty Farm and Dairy. In the Fall of 2017, the brand new creamery for Lakin’s Gorges Cheese was completed.
