Prairie Baking Co. is a custom cake and dessert bakery in Portland, servicing southern Maine, specializing in buttercream cakes decorated with fresh florals. We aim to showcase the natural flavors, colors, and textures of all the seasonal produce we have available to us here in southern Maine. We make delicious, artistically designed, custom cakes and pastries for weddings and special events.
Each cake, cookie, and pastry is made with care and with our customer in mind. We hand make all of our cakes and pastries including our swiss meringue buttercream and cake fillings using cage free eggs, king arthur flour, local butter, real vanilla, and local produce. We firmly believe that wedding cake should taste amazing as well as look amazing. We bake out of a shared kitchen space, Fork Food Lab, in the Bayside neighborhood of Portland, ME.

After receiving my B.A. in Studio Art from Loyola University Chicago in 2007, I attended Kendall College in Chicago for baking and pastry. Since then, I have honed my craft in both bakery and restaurant kitchens as a baker, a decorator, and a pastry chef.
My first baking job was in 2011, at Bittersweet Pastry Shop in Chicago, Illinois, as a cake builder. There I learned the art of perfectly smooth coating a cake in buttercream and meticulously decorating cookies with royal icing.
When my husband and I moved to Ann Arbor, Michigan, I split my time between working as a pastry baker at Zingerman’s Bakehouse and as a cake decorator at Sweet Heather Anne, a small custom cake studio. Working at Sweet Heather Anne was really instrumental in helping me decide how I want my business to work and how to use my creativity in my craft.
From there, we moved to Cleveland, Ohio, where I mostly worked in restaurants as a pastry chef. There, I learned to communicate my sense of flavor and my commitment to local and seasonal ingredients through baking.
Now we live in Portland, Maine, I honestly couldn’t have dreamed up a better city and community in which to start a business.
