Q: Where did you learn to cook?
A: I learned to cook in restaurants.
Q: What was it in life that made you decide you wanted to be a cook?
I fell in love with the rush of a busy service and the feeling you get once you’ve created something delicious.
Q: What’s your favorite thing to prepare?
My favorite thing to cook would have to be duck, from breaking down the birds to all the ways you can cook the breast and legs.
Q: Is there something you dislike about cooking?
One of the things I hate would be some of the under-appreciated work you do and how much passion and time go unnoticed or overlooked. (We At The Chefs Of Maine Hope To Change This!)
Q: Where’s your favorite Maine restaurant (Besides Your Current Place Of Work)?
My favorite Maine restaurant would have to be Leary’s Landing in bar harbor, always great food and awesome owners.
Q: Do you have a favorite bakery?
My favorite bakery would have to be Gross Convections Bakery in Portland, Maine.
Q: Any inspirational words or tips for someone thinking about jumping into the culinary industry?
A: Some advice for someone trying to get into the culinary industry would be, be ready to work hard it will pay off even when you think it won’t.
Q: Any big culinary plans for the future?
My big culinary plan for the future is to open my own American fine dining restaurant.
