Seafood Frenzy

The Maine coast is home to some of the best seafood anywhere! We will take advantage of that bounty in this class with Swordfish Caponata, grilled swordfish served over a medley of braised Mediterranean vegetables with a lemon-dressing. Cod Fillet will be seared and served over White Beans with Shrimp in a Chorizo Broth. Maine Lobster follows, and will be butter poached over a Fava Bean Custard. Paella is an ideal way to showcase seafood, and Chef Michael will share some of his secrets on this rather time-consuming crowd pleaser. $45pp
